This Chinese Tomato Soup is the ultimate comfort food. To make an ultimate Chinese Tomato Soup you need to follow a few extra steps to make it perfect.

Chinese Tomato Soup

This Chinese Tomato Soup can be made with or without noodles. Without the noodles, it is the perfect starter and with the noodles, it can be served as a main dish.

Ingredients
  • 1 white onion, chopped
  • 3 garlic cloves, finely sliced
  • 1L chicken stock
  • 140gr tomato paste
  • 2 tablespoons flour
  • 300ml water
  • 400gr canned tomatoes
  • 1 tablespoon of vinegar
  • 4 tablespoons maple syrup
  • Large thumb-size piece ginger, chopped
  • 3 spring onions, chopped
  • Pepper
  • Salt
  • Olive oil
  • Optional: 150gr noodles
Directions
Step 1
Put the onions and garlic in the chicken stock and bring to a boil. When it cooks, leave it on the stove for 12 min on low heat.
Step 2
Sift the mixture and set the chicken stock aside.
Step 3
Add 3 tablespoons of olive oil to the previously used stock pan and add the tomato paste. Fry off for 1 minute while stirring continuously.
Step 4
Stir in the flour and ginger. Add water until it smoothens out.
Step 5
Add the canned tomatoes, vinegar, maple syrup and chicken stock in the pan.
Step 6
Mix everything together, bring it to a boil and leave it on the stove on medium heat for 10 minutes. And chop your chosen vegetables.
Step 7
Blend the soup with an immersion blender until nice and smooth. Taste the soup and season to taste with salt and pepper.
Step 8
Add the spring onion to the soup (reserving some for serving) and simmer for about 5 minutes
Step 9
Optional: in another pan, you can boil some noodles to add to the soup later.
Step 10
When you serve the soup sprinkle over some chopped spring onions.
