This is how to make Eggs in Purgatory! A classic Italian dish, eggs baked in a garlicky, spicy tomato sauce!

Eggs in Purgatory

Baked Eggs in a spicy tomato sauce!

Ingredients
  • 3 cloves of garlic
  • 3 teaspoons olive oil
  • 400gr canned tomatoes
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 0.5 teaspoon chili flakes
  • 4 large eggs
  • 50gr parmesan cheese
  • Optional: basil
Directions
Step 1
Preheat the oven to 190℃/375°F.
Step 2
Heat the olive oil in a pan, add the garlic and chili flakes. Fry for about 1 minute.
Step 3
Add the canned tomatoes and break the tomatoes with the back of a spoon.
Step 4
Add the oregano and season with salt and pepper.
Step 5
Bring to a boil and turn down the heat. Simmer for about 10 minutes.
Step 6
Place the sauce in 2 oven-proof bowls.
Step 7
Make 2 dents per bowl and crack in the eggs.
Step 8
Season the eggs with salt and pepper and generously top off with parmesan and basil.
Step 9
Place in the oven for 12 to 15 minutes or until the whites are set and the yolks are still runny.
