Baked Eggs in a spicy tomato sauce!

Ingredients
- 3 cloves of garlic
- 3 teaspoons olive oil
- 400gr canned tomatoes
- 1 teaspoon dried oregano
- Salt and pepper
- 0.5 teaspoon chili flakes
- 4 large eggs
- 50gr parmesan cheese
- Optional: basil
Directions
- Step 1
- Preheat the oven to 190℃/375°F.
- Step 2
- Heat the olive oil in a pan, add the garlic and chili flakes. Fry for about 1 minute.
- Step 3
- Add the canned tomatoes and break the tomatoes with the back of a spoon.
- Step 4
- Add the oregano and season with salt and pepper.
- Step 5
- Bring to a boil and turn down the heat. Simmer for about 10 minutes.
- Step 6
- Place the sauce in 2 oven-proof bowls.
- Step 7
- Make 2 dents per bowl and crack in the eggs.
- Step 8
- Season the eggs with salt and pepper and generously top off with parmesan and basil.
- Step 9
- Place in the oven for 12 to 15 minutes or until the whites are set and the yolks are still runny.
