Our recipe of the classic vanilla cupcake with icing.

Ingredients
- Cupcakes:
- 125 gr caster sugar
- 125 gr butter, room temperature
- 0.5 vanilla pod
- 2 large eggs, room temperature
- 45 ml of milk
- 125 gr self-raising flour
- Icing:
- 250 gr powdered sugar
- 35 gr butter, room temperature
- 0.5 vanilla pod for vanilla version/cacao powder for a chocolate version
- 45 ml of milk
Directions
- Step 1
- Preheat the oven to 200℃/392°F. Prepare a muffin shape by buttering it.
- Step 2
- Whisk the butter, sugar, and the scrapings of half the vanilla pod to a smooth consistency, about 4 minutes.
- Step 3
- Add the egg, 1 at a time until completely incorporated.
- Step 4
- Now, add the self-raising flour by hand, to keep in most of the air. When incorporated add the milk and whisk through.
- Step 5
- Place in the oven for 15-20 minutes.
- Step 6
- Make sure the cupcakes are completely cooled down before adding the icing!
- Step 7
- For the icing, place the powdered sugar, butter, half a vanilla pod, and the milk in a bowl and mix. When the mixture is too dry, add a little milk and when it is too wet, add more powdered sugar.
- Step 8
- Spoon the icing on the cupcakes or use a piping bag.
- Step 9
- Decorate in any way you like.
